Once again, sorry for the three month hiatus. It's been INSANE lately. And as you can probably guess, cooking is a huge stress reliever for me. So, the other night I cooked a delish meal for my good friend Kylie. One of the highlights were the sweet potatoes I made as a side dish. I sweetened them up with some brown sugar and then smoked them up with some chipotle heat! Oh man, so good. I kind of eyeballed everything, so by all means don't feel constrained by the measurments!

Garden update 01.

It's been about a month since we planted our square foot garden. It's been so easy to maintain, in fact other than watering it on the days it doesn't rain, we've barely had to lift a finger. A minor hail storm hurt our tomato & pepper plants a little bit, but here are the pictures of the very successful plants!

Last week, we built our very own square foot garden. We are so excited to start incorporating our own home grown ingredients into our cooking. This is the first time I've gardened without the help of my mom's green thumb, so let's hope some of her talent is genetic! 

This was a very quick project that only took us a couple hours & $200. That money included all the lumber, soil, plants & seeds.

Beets are one of those vegetables that I always 'think' I love, but somehow when I eat them, I don't love them so much. I'll eat beets cause they're full of antioxidants & they prevent heart disease - boo ya! 

I experimented a little last night after buying a bunch of beets on sale - and it was a major success! 

I came up with this roasted beet salad - great hot out of the oven or chilled over night!

Bocconcini Salad.

Here's a quick salad. This is Drew's absolute favourite. 

Bocconcini Salad 


 
1 1/2 cups Cherry Tomatoes - cut in halves 
1 container  Bocconcini Cheese 
(I like to get the pearls so I don't have to cut them up) 
1/3 cup Basil - fresh & chopped
3 tbsp Balsamic Vinegar
1 tbsp Olive Oil 
Salt & Pepper 

Mix it all together in a bowl & serve! So easy!

I made this snack/meal after work today and later realized that each part makes a really healthy alternative to the junk we are more prone to crave after a hard day at 'the office'. I combined them all to make a really great meal!

My favourite bread is by Silver Hills, a bakery that uses no preservatives, no dairy & 100% sprouted grains. For a long time I thought 'sprouted grain' meant 'whole grain', when in fact sprouted grain bread has many added benefits to just your regular whole grain bread.

As a non-home-owner, I am a home-renter. As such, when moving out of any given place, cleaning for that dreaded walk-through with the landlord is always something to look forward to.. not. Simple Vinaigrette.

Here is a recipe for a vinaigrette that I've had a few friends ask for. I use it on almost every salad I make. 
Feel good eating it too because the ingredients are beneficial as well! 

Maple Dijon Vinaigrette 

3 1/2  tablespoons olive oil 
2 tablespoons balsamic vinegar 
2 teaspoons maple syrup 
2 teaspoons dijon mustard
salt & pepper to taste

My dad is reading a book called The Blue Zones - it's all about how to live longer & it interviews people from all over the world who have done so - father dearest shared some information that he learned in his readings..

Salmon Noodle Bowl.

Today I made a 'Mediteranian Noodle Bowl' with salmon & balsamic vinegar. A really nice combo - and the nice thing about this recipe is that you can add or make substitutions for other veggies that you prefer.

Also, I read an interesting article in Women's Health magazine that talked about 'power couples'. And they weren't talking about Bangelina. It was all about how to pair certain foods together so that they benefit you the most.

Fall Veggie Curry.

Wednesday was curry day today. I actually made it last night and let it cook in the crock pot today because I worked all day. Turned out to be a success, Drew got to bring some to work tonight, and I brought it home to the folks! A hit over all.


Fall Vegetable Curry

2 teaspoons olive oil
1 cut & peeled sweet potato
1 cup small cauliflower florets
1 small yellow onion - chopped
3-4 teaspoons curry powder
1/2 cup vegetable broth

I made my brie & apple quessadillas today! And they were pretty tasty! Pizza yesterday was good as well, but I want to share this recipe today.

After our gluttonous trip to Quebec City, both Drew & I decided that now would be a good time to get more proactive about being healthy. Generally speaking, we are very healthy. Drew hasn't eaten fast food in over a year.. and me? I'm more or less on good behavior until I get a craving for something salty. As my wedding approaches (4 days now), all the little details of everything have piled up and have caused every day in the last few weeks to actually be a little stressful. In these crazy times I wish I had my mom's problem; a loss of appetite. In my case, I have the opposite; salty & greasy foods make me feel so much better. Black Rice.

If you like to mix it up a little, you gotta try black rice. It is grown in Indonesia and used to be dubbed "forbidden rice" because it was only to be eaten by the Emperor and his family. I don't drink a whole lot of pop. When I do though, it's almost always a diet coke or pepsi. I drink it cause of the taste actually. I find if it's not diet then it leaves that syrupy sticky feeling at the back of my throat and I just end up more thirsty. People are always surprised that I'm drinking diet pop as opposed to regular because of the much feared aspartame...dun dun dun.

Blueberries are such little balls of magic aren't they? Again, I'm a huge fan of putting fruit in salads, so thats where the inspiration for todays post comes from. My favorite types are the kinds that involve interesting fruits, so that the flavor is usually a blend of sweet and spicy. We went to a BBQ Thursday night and it made me realize a couple things. 

#1 - I love having friends who work in the food industry because everyone knows how to make delicious food.

Chia Seeds.

The Chia Seed is one of my favorite new discoveries. It is seriously the best food invention by nature ever. Salvia hispanica is it's actual name and it used to be cultivated by the ancient Aztecs before Columbus came and discovered the 'New World'. They used to present it as gifts to their tribal leaders and men would use it to give them energy for their 24 hour warrior marches - this consisted of them running through the rain forest for 24 hours to prove their manliness or something.

I worked today. I like my job. Good people to work with, tasty food and a pretty fun clientèle to serve. You should come in sometime! If you like Greek food, they definitely do a good job of all the classics like the flaming cheese or Souvlaki, and on the weekends there is a lot of plate braking and dancing to add to the atmosphere.

Sweet Honey Bees.

Did you know that bees are an endangered species? I didn't know that until we met a couple a few weeks ago that actually have their own bee hives.
